Food safety certification is a legal requirement for anyone handling food commercially in most countries, and the Level 2 qualification is the standard entry point for kitchen, catering, retail, and food production staff.
The syllabus common to Level 2 Food Safety and Hygiene qualifications worldwide: microbiology and contamination, temperature control, personal hygiene, cleaning and disinfection, allergen management, pest control, and the HACCP principles that underpin every modern food safety system.
Identify the four routes of contamination and prevent each, apply safe temperatures with confidence, manage the major allergens, follow correct cleaning procedures, recognise pest activity, and answer exam questions on all of it.
| MODULE | WHAT IT COVERS |
|---|---|
| Contamination and bacteria | The four hazard types, how food poisoning happens |
| Temperature control | The danger zone, cooking, chilling, reheating |
| Personal and premises hygiene | Handwashing, illness reporting, cleaning, pests |
| Allergens and HACCP | The major allergens, the seven HACCP principles |
| Exam preparation | Question technique and a full practice test |
Each module ends with an exam-style quiz. You need 70% to pass — most awarding bodies set their real pass mark between 60% and 75%.
AN IMPORTANT NOTE ON CERTIFICATION This course prepares you for a food safety exam. The certificate you need for employment must be issued by a recognised awarding body in your country, after their assessment. Check your local food authority’s requirements — the science below is the same everywhere, but legal duties, temperatures written into law, and required qualifications vary by country.
