Food safety is a legal requirement for commercial food handling almost everywhere, and the syllabus is remarkably consistent across countries because the underlying science is the same. This course covers that shared syllabus in full: the four types of contamination, the bacteria that cause food poisoning and where they come from, temperature control with every number examiners test, personal hygiene and illness reporting, the six-stage cleaning process, pest recognition, allergen management, and the seven HACCP principles.
Every module ends with exam-style multiple-choice questions, and the final module covers question technique — including the negative-phrasing traps that cost candidates marks they should have had.
It teaches the numbers as numbers. 5–63°C, 75°C for 30 seconds, 63°C hot holding, 8°C within 90 minutes, 48 hours, 14 allergens, 7 principles, 6 cleaning stages. One table holds a large share of the available marks.
It takes allergens seriously. Allergen errors kill more people in food service than bacteria do, and the course covers cross-contact, the difference between allergy and intolerance, recognising anaphylaxis, and the fact that cooking does nothing to an allergen.

This course prepares you for a food safety exam. The certificate you need for employment must be issued by a recognised awarding body in your country.
